Baklava is a sweet confection exists all over Iran but in Kashan, it has a special receipt and ingredient. First, the traditional confectioner makes the dough. It is called Baklava Lavash made of milk, flour, sugar, animal fat. Between two layers of dough different nut are added. Special mix powder of cardamom seed with five kinds of nut: Pistachios, almond, walnut, hazelnut, Indian almond are used as a middle part of special Baklavas. Then the other thin layer of dough will be put on and cut in a rhomboid shape. Then cover it with animal fat and let it bake in an oven for five minutes.
